Carob extract (fiber) obtained from carob Ceratonia siliqua

Carob (Ceratonia siliqua) is an evergreen tree of Arabic origin that grows naturally and is widely found in Puglia, Calabria, and Sicily. Its fruits, the carob pods, are valued for their nutritional properties and their use in both food and health industries.

Bagnarese transforms these pods into a fine carob extract powder, creating a versatile and natural ingredient that serves as an excellent chocolate alternative or an enriching addition to various food products. Our carob fiber is a naturally gluten-free extract rich in benefits, containing fiber, antioxidants, minerals, and vitamins—essential elements for a balanced diet.

Carob extract is distinguished by its terracotta color, variable granulation, and naturally sweet taste. Thanks to its numerous qualities, it is widely used in various food applications and is particularly appreciated for its nutritional properties.

Applications

Food Preparations
Baked Goods
Pet Food

Like our other food extracts, carob extract is a versatile ingredient with multiple applications.

Thanks to their taste that recalls that of cocoa, it can be used in food preparations with a rich fiber content. It is also considered a thickener, emulsifier, stabilizer and gelling agent, used for example in the food industry for the preparation of ice cream but also an ingredient in numerous recipes for baked products.

Furthermore, thanks to its nutritional properties it is also used in the pet food industry.

Carob extract benefits

The carob extract benefits come from the nutrients naturally present in carob. Our carob fiber is an excellent source of dietary fiber, accounting for about 40% of its dry weight.

Carob fibers are mainly insoluble, but they also contain a certain amount of soluble fiber. Insoluble fiber helps promote intestinal transit and regularity. Soluble fiber, on the other hand, is useful for reducing blood cholesterol levels and controlling sugar levels, making it beneficial for people with diabetes or for those trying to maintain stable blood sugar levels.

Carob extract production process

1

Grinding

2

Decantation and Filtration

3

Drying

The production of carob extract begins with the harvesting of mature pods, which are then dried to reduce moisture and facilitate processing. Next, the pods are ground into a fine powder.

Unlike other manufacturers, Bagnarese performs additional decantation and filtration processes to further refine the extract, removing impurities and ensuring a high-quality product. Finally, the extract undergoes an additional drying process to enhance its stability and shelf life while preserving its nutritional properties.

Frequently asked questions about carob extract

Bagnarese carob extract is a fibre-rich plant-based ingredient obtained from the processing of Ceratonia siliqua pods. It is supplied in powder form, has a terracotta colour and a naturally sweet taste, and is intended for a variety of industrial applications.

Bagnarese carob extract is obtained from the processing of carob pods, the fruit of the Ceratonia siliqua tree. The process includes milling, decantation, filtration and drying.

They are different ingredients. Bagnarese carob extract is a fibre obtained from processing the carob pod, whereas locust bean gum, also identified as E410, is obtained from the endosperm of carob seeds and is mainly used as a thickener and stabiliser.

Carob extract can be used to increase the fibre content of formulations and contribute to the sensory and structural characteristics of the product. It can also function as a thickener, emulsifier and gelling agent, with applications particularly in food preparations, baked goods and pet food formulations.

Bagnarese carob extract has a naturally sweet taste with cocoa-like notes. This makes it particularly suitable for food formulations where fibre enrichment is combined with the characteristic sensory profile of carob.

Bagnarese carob extract is a fibre-rich ingredient intended mainly for food applications. Carob tannin, by contrast, is a concentrated extract of phenolic compounds obtained from the pod, available in both liquid and powder form and characterised by a bitter, astringent taste.

Yes. Bagnarese carob extract is natural and GMO-free and is produced without the addition of flavourings, colourings or other artificial substances.
