Phenolic compounds extracted from the carob pod Ceratonia siliqua

Carob (Ceratonia siliqua) is an evergreen tree of Arab origin that grows spontaneously and is widely found in Puglia, Calabria and Sicily. Carob is known for its fruits, which are pods rich in nutrients.

Bagnarese transformed these pods into powder, ideal as a substitute for chocolate or for food and nutritional purposes. Our carob tannin is a naturally gluten-free extract, which contains important nutrients such as fiber, antioxidants, mineral salts and vitamins.

In its liquid form, carob tannin appears dark brown with a neutral aroma and a bitter, astringent taste. In powder form, it has a reddish-purple color, a neutral aroma with cocoa notes, and the same bitter, astringent taste.

Thanks to a careful drying process, the powdered tannin retains the same qualities as the liquid form while offering the convenience of a powdered version.

Applications

Wine
Vinegar
Ciders
Beer
Nutraceuticals

Our carob tannin has many applications thanks to the polyphenols naturally contained in carob which perform an antioxidant, anti-inflammatory and vasoprotective function.

Polyphenols are attributed with the ability to modulate glycemia and for this reason they are important ingredients in the nutraceutical industry.

Our carob tannin can be used in the food industry, in the preparation of vinegar, cider and beer.
